Stuffed Mediterranean Colored Pepper

Stuffed peppers are a classic meal that is perfect for the whole family. The recipe doubles easily and freezes for quick meals later on.

Ingredients

  • 3 Colored Bell Peppers
  • 1 cup Sunwhite Rice, medium-grain
  • 1 tbsp Fresh Basil Or Parsley, fresh and chopped
  • 1 can Tomatoes, diced
  • 0.5 cup Mozzarella Cheese, grated
  • 0.5 kg Ground Turkey
  • 1 Onion, diced
  • 2 tbsp Basil Leaves
  • 1 tbsp Rosemary Leaves
  • 1 tbsp Thyme Leaves
  • 2 tbsp Oregano
  • 1 tbsp Dried Parsley, dried
  • 1 tbsp Garlic Powder
  • Salt
  • Black Pepper, to taste
  • 2 tbsp Olive Oil
  • 1 cup Water, for cooking rice
  • 0.5 cup Mozzarella Cheese, grated for topping

Method

  1. Prepare the bell peppers by cutting them in half and emptying the pulp, then brush them with olive oil and roast them in the oven until they are undercooked
  2. In a pan sauté the onion and add to it the ground turkey, herbs, salt and pepper.
  3. Add the tomatoes and cook all together.
  4. Add later the cooked rice, mozzarella, mix them all on medium heat until all melted, Add salt and pepper.
  5. Remove bell peppers from oven, add the stuffing on them, and then add additional little mozzarella on top.
  6. Put back in oven for 10 minutes.
  7. Serve warm
