Stuffed Mediterranean Colored Pepper
Stuffed peppers are a classic meal that is perfect for the whole family. The recipe doubles easily and freezes for quick meals later on.
Ingredients
- 3 Colored Bell Peppers
- 1 cup Sunwhite Rice, medium-grain
- 1 tbsp Fresh Basil Or Parsley, fresh and chopped
- 1 can Tomatoes, diced
- 0.5 cup Mozzarella Cheese, grated
- 0.5 kg Ground Turkey
- 1 Onion, diced
- 2 tbsp Basil Leaves
- 1 tbsp Rosemary Leaves
- 1 tbsp Thyme Leaves
- 2 tbsp Oregano
- 1 tbsp Dried Parsley, dried
- 1 tbsp Garlic Powder
- Salt
- Black Pepper, to taste
- 2 tbsp Olive Oil
- 1 cup Water, for cooking rice
- 0.5 cup Mozzarella Cheese, grated for topping
Method
- Prepare the bell peppers by cutting them in half and emptying the pulp, then brush them with olive oil and roast them in the oven until they are undercooked
- In a pan sauté the onion and add to it the ground turkey, herbs, salt and pepper.
- Add the tomatoes and cook all together.
- Add later the cooked rice, mozzarella, mix them all on medium heat until all melted, Add salt and pepper.
- Remove bell peppers from oven, add the stuffing on them, and then add additional little mozzarella on top.
- Put back in oven for 10 minutes.
- Serve warm
