Savoury Coconut Rice
We often think sweet when we think of coconuts but they’re the star in this savoury dish as well.
Ingredients
- 350 g Sunrice White Medium Grain Rice
- 1 pinch Turmeric, ground
- 1.5 Cloves
- 2.5 tbsp Soy Sauce
- 700 ml Coconut Milk
- 0.5 Cinnamon Stick
- 1 stalk Lemongrass Stalk, flattened
- 2 Onions, sliced into rings
- 1 tsp Rice Flour
- 0.5 cup Vegetable Oil
- 1 Cucumber, cut in slices
- 1 tsp Chives, chopped
Method
- Add a pinch of turmeric, the cinnamon, cloves, lemongrass and soy sauce to the coconut milk and bring to the boil.
- Add the rice, cover and cook over a low heat for around 20 minutes.
- Mix the onions and flour together and fry in the hot oil for 4-5 minutes until golden brown.
- Drain on kitchen paper.
- Remove the cinnamon, cloves and lemon grass from the rice
- Season to taste with soy sauce and divide between bowls.
- Serve garnished with onions, cucumber and chives.
