Rice burger
This rice burger makes an easy vegetarian meal for the whole family.
Ingredients
- 500 g Rice, cooked
- 3 tbsp Rice Wine Vinegar
- 1 tbsp Caster Sugar
- 1 tsp Salt
Method
- Add your rice to a large bowl. If you’ve just cooked the rice, make sure it has been cooled to room temperature. If using leftover rice, make sure you break it up into smaller chunks before continuing!
- Add the rice wine vinegar, sugar and salt to a small bowl. Microwave on high for about 20 seconds to dissolve the sugar and salt and add the vinegar mix to the rice and mix with a large spoon to combine.
- Oil the inside of an 8cm cookie cutter and place on a plate. Spoon a quarter of the rice into the cookie cutter and press down with a spoon to compact the rice into a patty. Once you’re done, remove the cookie cutter and use a spatula to remove the patty from the plate. Repeat with the remaining rice until you have 4 patties.
- Add about ¼ cup of neutral oil to a pan and fry the rice patties for about 3-4 minutes on both sides until crispy. Remove rice patties from pan and place on paper towel to absorb any oil. Sprinkle with salt.
- Assemble the burger with whatever fillings you want and enjoy that crispy goodness
