Okra with meat and vermicelli rice
This is a version of Bamia – a Lebanese dish made with okra and tomatoes. Served on vermicelli rice, it’s a delicious dish that’s healthy and easy to prepare.
Ingredients
- 1 tsp Olive Oil
- 250 ml Water
- 5 ml Pomegranate Molasses
- 1 Onion, chopped
- 20 g Coriander
- 500 g Tomatoes
- 800 g Okra
- 85 g Tomato Paste
- 15 g Garlic
- 0.5 tsp 7 Spices
- 1 tsp Grounded Coriander
- Salt And Pepper, to taste
Method
- Crank up the heat and get that olive oil sizzling!
- Toss in some onion and garlic and let them sweat until they're crystal clear.
- Pop in those gorgeous Okra (no need to chop) and give everything a good stir.
- Add in some juicy tomato and keep stirring.
- Close the lid and let it cook for approximately 7 minutes, giving those flavors time to mingle.
- Add in all the other delicious ingredients and give it a good stir. Now, lower the heat to med-low and let it cook for another 20-25 minutes, checking in every 10 minutes or so.
- When everything has softened, that's when you know the Okra is good to go.
- Serve with vermicelli rice for the perfect pairing.
