Mediterranean Chicken Rice
Mediterranean Chicken Rice is a traditional dish, full of flavour.
Ingredients
- 2 cup Sunwhite Medium Grain Rice
- 2 Bay Leaves
- 4 Cardamom Pods
- 2 tsp Salt
- 2 tbsp Vegetable Oil
- 11 piece Chicken Leg - Thighs And Drumsticks
- 0.5 tbsp Salt
- 1 pinch Black Pepper, ground
- 0.25 tbsp Mixed Spices
- 0.25 tbsp Cardamom, ground
- 0.25 tbsp Cumin
- 2 tbsp Vegetable Oil
- 2 Onions, finely sliced
- 4 clove Garlic Cloves, crushed
- 2 Tomatoes, cut into small cubes
- 1 piece Hot Green Pepper, large size / cut into cubes
- 2 cup Water
Method
- Wash the rice several times and let it soak in water for at least 30 minutes.
- Pour a large amount of water into a deep saucepan and add to it: bay leaf, cardamom, salt and oil.
- Put the pot on a medium heat and leave the ingredients until they boil well.
- Add the soaked rice and cook for about 10 minutes, then drain.
- Mix together the salt, black pepper, ground cardamom and cumin until all are mixed
- Put the chicken pieces in a bowl and season with half of the resulting mixture of spices.
- In a deep pan, heat the oil over a medium heat.
- Add the seasoned chicken pieces.
- Cook the chicken, for 10-12 minutes a side, until the outside is golden brown, then set aside.
- Put the onion wings in the same pan and stir until they wilt, then add the garlic, black pepper and tomatoes
- Mix the previous ingredients with the remaining amount of the spice mixture and stir until the flavors are well distributed.
- Pour the water into a pot, bring to a boil and let the vegetables cook for at least 5 minutes.
- Add the cooked Sunwhite rice to boil with the vegetables for a few minutes, stir well
- On a plate, place the seasoned rice and fried chicken on top.
- Add the parsley for decoration.
