Recipe
Mango sticky rice pudding
This sweet dessert combines the flavours of mango and coconut for a treat everyone will enjoy.
Ingredients
- 1 Mango, ripe
- 2 cup Sunwhite Medium Grain Rice
- 1 can Coconut Milk
- 1.33 cup Water
- 1 tbsp Butter
- 1 Black Sesame Seeds
- 0.25 tsp Salt
- 1.5 cup Coconut Milk
- 0.75 cup Coconut Sugar
Method
- Immerse your rice in water for an hour or two to get that perfect texture.
- After rinsing, transfer your rice to a pot and add coconut milk and water to it. Boil, cover, and simmer until the liquid is absorbed.
- Once cooked, let it cool down before shaping it into cute oval rice balls.
- Time to whip up that irresistible coconut sauce! Combine coconut milk, butter, and coconut sugar in a saucepan, bring it to a boil, and let it simmer until it thickens up.
- Finally, add the finishing touches by topping your rice balls with juicy slices of mango and pouring a drizzle of that luscious coconut sauce over them. Don't forget to sprinkle some black sesame seeds on top to give it that added flair.
Medium Grain
Medium grain rice has short, plump grains that cook up soft, moist and slightly sticky — the grains cling together gently, making it easy to serve and eat. Sunwhite® medium grain Calrose rice is grown in Australia and loved across the Middle East for everyday family meals.
Its tender texture makes it ideal for dishes where the rice soaks up rich flavours — kabsa, mansaf, maqluba and machboos — as well as sushi, paella and creamy rice desserts.
