Lentil Soup with Rice
Lentil soup is a wonderfully warming meal packed with protein and nutrients. A perfect vegetarian meal to fill you up.
Ingredients
- 1 Onion, finely chopped
- 3 tbsp Vegetable Oil
- 1.5 cup Crushed Red Lentils, crushed
- 0.5 cup Sunwhite Medium Grain Rice
- 2 tsp Cumin
- 1 tsp Turmeric
- 0.25 tsp Ground Cardamom
- 0.25 tsp Black Pepper
- 0.25 tsp Hot Red Pepper
- 1 tsp Salt
- 10 cup Beef Or Chicken Broth
Method
- Wash rice and lentils, put them in a large saucepan, add water, and leave it on a high heat until it boils, then let it simmer over a low heat.
- Meanwhile, put oil in a frying pan and add onions, salt, cumin, turmeric, cardamom, black and red pepper, stir the onion until wilted, then add it over the lentils and rice.
- Stir the ingredients and let it boil for about five minutes, then put the soup in the electric blender and turn it on until the mixture becomes smooth.
