Kousa Mahshi (Zucchini Stuffed with Rice and Meat)
This dish is perfect for sharing with guests - it looks and tastes amazing.
Ingredients
- 1 cup Sunwhite Basmati Long Grain Rice, rinsed and drained
- 0.5 kg Zucchini, cut into small pieces
- 250 g Beef, minced
- 4 tbsp Tomato Paste
- 1 tsp Allspice, ground
- 0.5 tsp Cumin, ground
- 0.5 tsp Chili Pepper, ground
- 0.5 tsp Coriander, ground
- Salt And Pepper, to taste
Method
- In a bowl, mix the meat and rice well seasoning with the spices.
- Remove the stalks of the zucchinis then core out the interior (use a spoon or a corer). Leave about 1 centimeter thickness on the inside.
- Stuff each zucchini (by hand or spoon) with the meat and rice mixture. Try not to overstuff the zucchinis by leaving about 1 centimeter empty at the top of each piece as the stuffing expands while it cooks.
- In a large saucepan, add 2 to 3 cups of water along with the tomato paste, seasoning it with salt and pepper and bring to a boil.
- Reduce the heat, add the stuffed zucchini, and simmer for 55 minutes to 1 hour.
- Serve hot with the sauce.
Medium Grain
Medium grain rice has short, plump grains that cook up soft, moist and slightly sticky — the grains cling together gently, making it easy to serve and eat. Sunwhite® medium grain Calrose rice is grown in Australia and loved across the Middle East for everyday family meals.
Its tender texture makes it ideal for dishes where the rice soaks up rich flavours — kabsa, mansaf, maqluba and machboos — as well as sushi, paella and creamy rice desserts.
