Kofta Bil Tahini Rice Bake

A flavorful oven-baked dish of kofta, rice, and creamy tahini sauce, prepared in just 30 minutes. \

Ingredients

  • 1 cup Sunwhite Calrose, Rinsed
  • 1.75 cup hot broth/water + salt
  • pinch turmeric, optional
  • 450 g minced beef/lamb
  • 1 small onion, grated
  • 1 tsp 7-spice (or allspice) + salt/pepper
  • pinch cumin, optional
  • 0.5 cup tahini
  • 0.5 cup warm water, to thin
  • 1.5 tbsp lemon juice
  • 1 garlic clove
  • salt

Method

  1. Mix the rice with the hot broth or water, salt, and turmeric if using.
  2. In another bowl, combine the minced meat with the grated onion, spices, salt, and pepper
  3. Then shape the mixture into small flat patties.
  4. Pour the rice and liquid into a baking dish, then arrange the kofta patties on top.
  5. Mix the tahini, warm water, lemon juice, garlic, and salt until the sauce is smooth and pourable.
  6. Pour the tahini sauce evenly over the rice and place the kofta on top.
  7. Cook it in the oven at 200°C for 18–22 minutes, until the rice is tender and the kofta is fully cooked.
  8. Let it rest for 3 minutes, then finish with lemon, parsley, and nuts if desired before serving
