Italian Rice Salad
Try our Italian rice salad, it’s versatile, delicious, and nutritious.
Ingredients
- 0.5 Lemon, zest, and juice
- 4 clove Garlic, peeled and minced
- 1 tbsp Italian Seasoning
- 5 tbsp Olive Oil
- 600 g Sunwhite Medium Grain Rice, leftover
- 60 g Black Olives, sliced
- 1 Red Onion, peeled and diced
- 0.5 Cucumber, seeded, cut into cubes
- 4 tbsp Pine Nuts
- 100 g Cherry Tomatoes, quartered
Method
- In a small jar, mix the zest and juice of half a lemon, garlic cloves, Italian seasoning, and olive oil.
- Loosen the rice out with a spoon or wet hands so that the rice grains are separated.
- In a large bowl, mix leftover rice and the rest of the salad ingredients. Drizzle the dressing and mix thoroughly.
- Serve with chopped fresh herbs like basil or parsley if desired.
