Italian Rice Salad

Ingredients

  • 0.5 Lemon, zest, and juice
  • 4 clove Garlic, peeled and minced
  • 1 tbsp Italian Seasoning
  • 5 tbsp Olive Oil
  • 600 g Sunwhite Medium Grain Rice, leftover
  • 60 g Black Olives, sliced
  • 1 Red Onion, peeled and diced
  • 0.5 Cucumber, seeded, cut into cubes
  • 4 tbsp Pine Nuts
  • 100 g Cherry Tomatoes, quartered

Method

  1. In a small jar, mix the zest and juice of half a lemon, garlic cloves, Italian seasoning, and olive oil.
  2. Loosen the rice out with a spoon or wet hands so that the rice grains are separated.
  3. In a large bowl, mix leftover rice and the rest of the salad ingredients. Drizzle the dressing and mix thoroughly.
  4. Serve with chopped fresh herbs like basil or parsley if desired.
