Fried Rice with Eggs
Eggs add a delicious source of protein to this classic fried rice dish.
Ingredients
- 1.5 cup Sunwhite Basmati Long Grain Rice
- 2 Eggs, lightly beaten
- 2 tbsp Sunflower Oil
- 2 Carrots, diced
- 0.5 cup Frozen Peas
- 2 Large Spring Onions, finely chopped
- 2 clove Garlic, minced
- 1 tbsp Soy Sauce
- 2 Peppers, chopped
- 0.5 Broccoli, chopped into florets
- 1 tsp Five-Spice Powder
- Salt And Pepper
Method
- Wash the rice, strain it and mix it in a pot with two cups of water and a teaspoon of salt. Bring it to a boil. Lower the heat, cover the pot and cook for 10 minutes.
- Stir in the carrots and peas, cover the pot again and cook for 10 more minutes. Remove from heat, let it stand, covered, for a couple of minutes then fluff the rice using a fork.
- Heat a tablespoon of the oil in a saucepan, add the eggs and cook for 2-3 minutes. Turn the resulting omelette over and cook it for 1-2 minutes.
- In a different pan, heat the remaining oil and cook the spring onions for 2-3 minutes until tender and translucent.
- Add the garlic and cook for 2-3 more minutes.
- Add the peppers, broccoli, and soy sauce. Season with five-spice mix, salt, and pepper and cook for 2-3 minutes.
- Put the omelette in the middle of the broccoli and pepper mix and scatter the cooked rice around it. Cook the mix for 2-3 minutes stirring it gently.
- Season with salt and pepper. Serve.
