Fried Rice with Eggs

Eggs add a delicious source of protein to this classic fried rice dish.

Ingredients

  • 1.5 cup Sunwhite Basmati Long Grain Rice
  • 2 Eggs, lightly beaten
  • 2 tbsp Sunflower Oil
  • 2 Carrots, diced
  • 0.5 cup Frozen Peas
  • 2 Large Spring Onions, finely chopped
  • 2 clove Garlic, minced
  • 1 tbsp Soy Sauce
  • 2 Peppers, chopped
  • 0.5 Broccoli, chopped into florets
  • 1 tsp Five-Spice Powder
  • Salt And Pepper

Method

  1. Wash the rice, strain it and mix it in a pot with two cups of water and a teaspoon of salt. Bring it to a boil. Lower the heat, cover the pot and cook for 10 minutes.
  2. Stir in the carrots and peas, cover the pot again and cook for 10 more minutes. Remove from heat, let it stand, covered, for a couple of minutes then fluff the rice using a fork.
  3. Heat a tablespoon of the oil in a saucepan, add the eggs and cook for 2-3 minutes. Turn the resulting omelette over and cook it for 1-2 minutes.
  4. In a different pan, heat the remaining oil and cook the spring onions for 2-3 minutes until tender and translucent.
  5. Add the garlic and cook for 2-3 more minutes.
  6. Add the peppers, broccoli, and soy sauce. Season with five-spice mix, salt, and pepper and cook for 2-3 minutes.
  7. Put the omelette in the middle of the broccoli and pepper mix and scatter the cooked rice around it. Cook the mix for 2-3 minutes stirring it gently.
  8. Season with salt and pepper. Serve.
