Recipe
Egyptian Fattah
This is a traditional Egyptian food that can be used to celebrate any occasion.
Ingredients
- 1 kg Meat
- 4 clove Garlic
- 2 loaf Pita Bread / Arabic Bread
- 3 tbsp Vinegar
- 2 cup Cooked Rice, cooked
- Black Pepper, to taste
Method
- Cut the meat into cubes, and boil it in a saucepan, then cover the mixture, leave to boil a little until the meat is completely cooked, then filter the broth, and set aside. Toast the pita or Arabic bread in the oven for 30 minutes until it becomes crunchy.
- Divide the Arabic bread or pita bread into small pieces and place in a deep plate.
- Pour a cup of the boiled meat broth over the crusty bread.
- Add the cooked rice on top of the bread.
- Season the rice with a generous amount of black pepper. Chop the garlic into small pieces, then fry in a frying pan with oil until golden, then add vinegar, and leave to concentrate a little.
- Pour the vinegar and garlic mixture over the rice.
- Place the meat on top of the rice, and serve hot.
Medium Grain
Medium grain rice has short, plump grains that cook up soft, moist and slightly sticky — the grains cling together gently, making it easy to serve and eat. Sunwhite® medium grain Calrose rice is grown in Australia and loved across the Middle East for everyday family meals.
Its tender texture makes it ideal for dishes where the rice soaks up rich flavours — kabsa, mansaf, maqluba and machboos — as well as sushi, paella and creamy rice desserts.
