Chicken and Vegetable Soup
This easy soup is quick to prepare and makes enough for leftovers.
Ingredients
- 2 tbsp Oil
- 1 Onion, chopped
- 1 Chicken, skinless and cut into 8 pieces
- 1 Garlic Cloves, mashed
- 12 tsp 7 Spices Mix, including: cinamon, nutmeg, ginger, cloves, pepper, and fenugreek
- 2 Tomatoes, peeled and chopped
- 2 Limes, dried and halved
- 2 cube Chicken Broth
- 0.5 cup Coriander, leaf/chopped
- 5 cup Water
- 2 Zucchini, cut into large cubes
- 1 Carrot, peeled and cut into large cubes
Method
- Heat the oil in a large pot and fry the onions for 5 minutes or until golden.
- Add the chicken pieces and cook for 5 minutes.
- Add the garlic, sprinkle with spices, chop the tomatoes and dried lime. in addition to the chicken stock cubes and coriander, and stir for a few minutes.
- Pour the water and boil for 10 minutes, then add the zucchini pieces and carrots.
- Bring to a boil over low heat, stirring occasionally, for 20 minutes or until chicken and vegetables are cooked through.
