Chicken and Vegetable Soup

This easy soup is quick to prepare and makes enough for leftovers.

Ingredients

  • 2 tbsp Oil
  • 1 Onion, chopped
  • 1 Chicken, skinless and cut into 8 pieces
  • 1 Garlic Cloves, mashed
  • 12 tsp 7 Spices Mix, including: cinamon, nutmeg, ginger, cloves, pepper, and fenugreek
  • 2 Tomatoes, peeled and chopped
  • 2 Limes, dried and halved
  • 2 cube Chicken Broth
  • 0.5 cup Coriander, leaf/chopped
  • 5 cup Water
  • 2 Zucchini, cut into large cubes
  • 1 Carrot, peeled and cut into large cubes

Method

  1. Heat the oil in a large pot and fry the onions for 5 minutes or until golden.
  2. Add the chicken pieces and cook for 5 minutes.
  3. Add the garlic, sprinkle with spices, chop the tomatoes and dried lime. in addition to the chicken stock cubes and coriander, and stir for a few minutes.
  4. Pour the water and boil for 10 minutes, then add the zucchini pieces and carrots.
  5. Bring to a boil over low heat, stirring occasionally, for 20 minutes or until chicken and vegetables are cooked through.
